IF YOU’RE USING lentils in a recipe, make sure to sort through
them to take out any pebbles or other debris. The best way is
to pour them onto a white dish so you can see everything
clearly. This is a great task to share with children.
WHEN SEPARATING EGGS, don’t obsess about getting every
bit of the white off the yolk. “Leave the snot on,” says
DePalma. “The yolks’ll be fine.” (This isn’t true of the whites,
which won’t whip up if any yolk is mixed in with them.)
THE BEST WAY to fold two ingredients together—particularly
whipped cream and an egg-based custard, such as semifreddo—
is with a whisk. Make sure to use a folding motion and the
wires will help incorporate the two ingredients without losing
air.
