Clark’s Kitchen Know-How

KEEP A KITCHEN JOURNAL to record what you bring home
from the farmer’s market each time you go and what you made
with it. That way you know what to expect and what you can
make the same time next year when you return to the market.
KEEP A SALT PIG next to the stove so a pinch of salt is just a
reach away; a darkroom timer is good to have, too, and is a
visually interesting tool to keep track of what you have in the
oven.
ALEPPO PEPPER from Turkey is a great condiment to keep on
your kitchen table; it’s fruity, smoky, and a little bit spicy. If
your dinner turns out not-so-good, you can save it with a
drizzle of olive oil and a sprinkling of Aleppo pepper.
