CHARLES HAS a vacuum sealer that she uses to seal all kinds of
protein that she stores in her freezer: meat, chicken, fish, you
name it. A vacuum sealer ensures that you’ll always have
something to cook, especially when you don’t feel like
shopping for food. When it’s time to make dinner, simply
defrost the protein and cook as you would something that you
bought fresh.
CREATE YOUR OWN vinaigrette by playing around with
different combinations of oil, vinegar, mustard, and herbs; taste
as you go. If it’s too vinegary, add water.
WHEN SHOPPING for soft-shell crabs, buy them live. They
should still be moving when you’re ready to cook them.
