1 cucumber, sliced thin
½ pound smoked trout (or sable, sturgeon, or white fish),
deboned
For the dressing, whisk together all the ingredients and then taste
to adjust. For a more acidic flavor, add more vinegar. To thin out
the consistency, add a splash of water.
Toss the lettuce with some of the dressing and put on a plate.
Fan the cucumber around it and place the smoked fish on top.
Spoon more dressing over everything; use just enough without
going overboard. Serve immediately.
