cream.
* You might doubt that it’s possible to peel a raw peach with a
peeler (the skin is so thin), but Martin said if you wiggle the
peeler from side to side as you peel, it’ll work. And sure
enough, it does. It’s easier to start peeling at the bottom of the
peach.
* If the caramel seizes and you see a hard plastic-like piece at the
bottom, don’t worry: it’ll melt as you bring the liquid back to a
boil.
