Powell’s Kitchen Know-How


WHEN YOU’RE adding water to something that’s cooking, bring
the water to a boil first so you don’t stop the cooking process.
USING FLAVORED stock is a waste in a braise; you’re much
better off just using water. The bones of the meat will give the
dish wonderful flavor.
IF YOU LIKE heat in your cooking, consider buying habanero
powder (see Resources. Powell calls this “hell powder” and
uses it in his squash soup).
