Fill a large pot with water (about 8 cups) and bring it to a boil.
Add all the seasonings—both salts, the pepper, the red pepper
flakes, and the sugar—and taste the water to make sure it’s
flavorful. Add the onion and the collards, a handful at a time.
Lower the temperature slightly and cook the greens for at least
15 minutes until they’re tender. You can only know by tasting
them. As you taste, adjust for salt, pepper, red pepper, and sugar.
When the greens are cooked to your liking, serve ’em up with a
spoonful of spicy chowchow.
