Slice the steak against the grain, sprinkle with fleur de sel, if
using, and serve with the compound butter on top.
* If you want to save money, Noren and Arnold say you can use
this same technique with hanger steak or skirt steak.
* Arnold says you want to use a freezer bag “that doesn’t have a
thingamjig.” By that, he means a zipper contraption that sticks
out of the bag. Use the freezer bags with the red and blue lines
that come together cleanly when you press them.
