Rub the aged mozzarella between your hands and sprinkle over
the pizza in a thin layer. Pinch off chunks of the fresh mozzarella
and scatter around. Drizzle with olive oil and place the pizza in
the oven, either from the paddle onto a pizza stone or via a cookie
sheet.
Bake for 10 minutes, or until the cheese is brown and bubbly
and the crust is golden brown. Remove from the oven and sprinkle
with the Parmesan. Cut into wedges or squares and serve.
