Properties of Fatty Acids
Each oil is composed of fatty acids, and each type of fatty acid has certain
properties. Below is a list of terms that you may see, used to describe oils, or the fatty
acids contained therein. Knowing what each term means can help you to determine
which oils to use, based on the percentage of each type of fatty acid each one
contains.
