(a) Getthe outsideliningofthe smallin-
testineof a pig. Wash thoroughlywith salt
and then putinto hotwaterfor 10 minutes.
Tie oneend,forceairthroughfromtheother
end,andtie. Dryinthehotsvm.

(&) Cutporkintopieces%inchby%inch

by %inch. To everypoundofporkadd an

equal amount of pig liver, which has been
rubbed withsalt,washed thoroughly,and cut
intopiecesthesamesizeasthepork. Tothis
add 3 ounces ofsalt, 1 tablespoonfulofFun
Wine,andafewthreadsoforangeskin. Mix
well.
(c) Bymeans of afunnelfillthisintothe
lining. Put a knob about every six inches.
Punch plenty of small holes with a needle,
toletintheair.
(d) Exposeinthehotsunfor^1 day. Put
inawindyplacefor 4 days.
