1 chickencutinto fragments
2 cupswaterchestnuts
2 cupsmushrooms
2 cups bamboo shoots
2 cupscelerycutintothinpieces

ThisdishisnotknowninChina. Fromthe
nameitmeanssimplyavarietyofsmallpieces.
However, the principles of Chinese cooking
are thesame.
(a) Put the water chestnuts, mushrooms,
bambooshoots,andceleryintoahotpancon-
taining oil. Fry for 2 minutes. Addwater
andcookfor 15 minutes.


(&) Put thechicken in a frying-pan con-
tainingoilandfryfor 5minutes.
(c) Addthesecondaryvegetablesandmix
well.
[d) Add enough primary soup to cover,
andcookfor 5 minutes.
{e) AddChinesegravyandstir. Remove
fromthestoveatonce.
