This classic Greek dish which is one of my favorites, includes not only traditional
eggplant and lamb, but also potatoes for a hearty casserole. Prep time for this tasty dish
is 1 hour and 15 minutes while cook time clocks in at 45 minutes for a grand total of 2
hours of your time but it will yield you approximately 8 to 10 servings.
Ingredients:
2-3 eggplants (about 1 1/2 pounds), sliced lengthwise in 1/4 inch slices
1 1/2 pounds zucchini, sliced lengthwise in 1/4 inch slices
1 1/4 pounds potatoes
2 cups breadcrumbs
4 eggs, separated (reserve yolks for Bechamel)
2 tbsp. olive oil
1 medium onion, diced
2 garlic cloves, minced
1 15 oz. can chickpeas, (Garbanzo) drained, rinsed, and mashed
1 15 oz. can diced tomatoes, with liquid
2 tbsp. tomato paste
1/4 tsp. ground cinnamon
1 tsp. dried oregano
1/2 tsp. ground cumin
1 tsp. sugar
Sea salt and pepper to taste
3/4 cup grated Kefalotyri or Parmesan cheese

1/2 cup flour
3 cups milk, warmed
4 egg yolks (reserved from above)
A pinch of ground nutmeg
