Roasting carmelizes and brings out the flavor of zucchini, squash, bell peppers,
asparagus, and onion. Makes a great side dish or even add between 2 slices of bread,
makes a great veggie sandwich. Prep time is only 15 minutes and cook time is 30
minutes for a total of 45 minutes yielding about 4 servings.
Ingredients:
1 medium zucchini, cut into bite-size pieces
1 medium yellow summer squash, cut into bite-size pieces
1 medium red bell pepper, cut into bite-size pieces
1 medium yellow bell pepper, cut into bite-size pieces
1 pound fresh asparagus, cut into bite-size pieces
1 red onion, chopped
3 Tbsp extra virgin olive oil
1 tsp sea salt
1/2 tsp black pepper
How to prepare:
Preheat the oven to 450 degrees F.
Place the zucchini, squash, bell peppers, asparagus, and red onion in a large roasting
pan, and toss with the olive oil, salt, and black pepper.
Spread in a single layer.
Roast for 30 minutes, stirring occasionally, until the vegetables are lightly browned
and tender.
