Citrus juices, mango, fresh ginger, and herbs give a tropical flair to couscous. This pasta
dish is incredibly fast and easy to make. It is served at room temperature so it's a great
choice for buffets and parties. Prep time is 10 minutes while cook time is only 5 minutes
for a total time of just 15 minutes providing you with 8 portions.
Ingredients:
2-1/4 cups fresh orange juice
1 tsp ground cumin
1 box (10 ounces) couscous
2 Tbsp olive oil
2 Tbsp reduced-sodium soy sauce
2 Tbsp fresh lime juice
1/4 cup chopped fresh cilantro
2 Tbsp chopped fresh basil or 1 tsp dried
2 Tbsp chopped fresh chives
1 tsp grated fresh ginger
1 mango, peeled, pitted and chopped
1/4 cup pine nuts, toasted
How to prepare:
 Bring orange juice and cumin to boiling in a medium-size saucepan.
 Add couscous and cover.
 Remove from heat and let stand 5 minutes.
 Remove to a large bowl; cool.
 Mix olive oil, soy sauce and lime juice in a small bowl.
 Stir into couscous.
 Stir in cilantro,basil, chives, ginger, mango, and orange.
 Sprinkle with pine nuts.
