4411 .. FFEENNNNEELL SSAALLAADD (^)
A simple salad that will take you about 5-10 minutes to prepare and will yield you about
4 servings.
Ingredients:
1 medium bulb fennel
2 tablespoons (1/2 ounce) grated Parmesan cheese
1 tablespoon olive oil
2 teaspoons Red Wine Vinegar or white wine vinegar
1/4 teaspoon ground black pepper
How to prepare:
Cut the top stalks from the fennel bulb.
Reserve some of the dill-like leaves; discard the stalks.
Cut the fennel into lengthwise quarters.
Cut out and discard the core sections.
Cut the quarters into thin slices.
Chop the leaves.
Place in a bowl with the cheese, oil, vinegar, and pepper.
Toss to mix. Enjoy!
