This simple soup recipe takes about 10 minutes of prep time and 20 minutes of cook
time for a total of 30 minutes of your time and will provide you with 4 portions.
Ingredients:
1 tbsp (15 mL) extra-virgin olive oil
1 onion, finely chopped
4 garlic cloves, minced
1/4 tsp (1 mL) hot pepper flakes
28 oz (794 g) diced tomatoes
3-1/2 cups (875 mL) vegetable stock
1 lb (454 g) frozen lima beans
2 tbsp (30 mL) chopped fresh parsley
1/4 tsp (1 mL) sea salt
1/4 cup (60 mL) grated romano cheese or Parmesan
How to prepare:
 In large saucepan, heat oil over medium heat; cook onion, garlic and hot pepper
flakes until softened, 5 minutes.
 Add tomatoes, stock and lima beans; bring to boil.
 Cover and reduce heat to medium-low; cook for 10 minutes.
 Add parsley and salt.
 Serve sprinkled with cheese.
