With caramelized onions, aged cheddar cheese and apple slices, the humble grilled
cheese sandwich is transformed into gourmet fare! Prep time for this recipe is about 10
minutes and cook time about 15 minutes for a grand total of 25 minutes yielding you 4
sandwiches to enjoy for either lunch or when you are on the go!


Ingredients:


8 slices bread, preferably whole wheat toast bread
4 tbsp. butter
About 1/2 cup to 3/4 cup caramelized onions
4 thick slices aged cheddar cheese
2 apples, thinly sliced
4 handfuls baby arugula
3 tbsp. olive oil
1 1/2 tbsp. balsamic vinegar
Sea salt and freshly ground pepper, to taste


How to prepare:


 Assemble 4 sandwiches with caramelized onion, cheese and apple slices.
 Butter the outer sides of the bread slices.
 Heat a large frying pan over medium heat.
 Add sandwiches (in batches if needed) and cook until bread is golden brown and
cheese melts, about 3 to 4 minutes per side.
 If needed, finish sandwiches in a preheated 350 degree F. oven to melt the cheese.
 To make a quick arugula salad: Drizzle arugula with olive oil and balsamic vinegar.
Season with salt and pepper and toss to combine.
 Serve grilled cheese sandwiches with arugula salad or your favorite Soup.
 For the caramelized onions: Heat 1/4 cup olive oil in a large heavy-bottomed pan
over medium to medium low heat. Add 5 thinly sliced onions. Cook onions, stirring
regularly, until dark golden brown and caramelized, about 1 hour.
