Almond-Onion-Parsley Soup


An almond can sprout only slightly at room temperature. For almonds to fully sprout and grow into a tree, they require a temperature of 57°F.


Soaked and germinated almonds, however, still have a higher nutritional value than the original nut and are far tastier than a fully sprouted


almond.


SERVES 2 TO 4

1 tablespoon cumin seeds
½ cup sprouted almonds
2 cups filtered water
½ cup loosely packed fresh curly parsley leaves, plus ¼ cup chopped parsley, for garnish
1 teaspoon chopped fresh oregano
1 clove garlic, crushed
1 tablespoon olive oil
Bragg Liquid Aminos
⅓ cup minced sweet onion

Using a coffee grinder or small food processor, grind the cumin seeds into a powder. Place the almonds and water in a blender and blend until
smooth. Add the ½ cup parsley leaves, oregano, ground cumin, garlic, and oil and blend until smooth. Add the Braggs to taste. Pour the soup into
individual bowls, stir in the onion, and garnish with the chopped parsley.
