Sweet Potato Soup
To make sweet potatoes more palatable, after shredding them, soak them in water with some sea salt for at least 2 hours. This will help pull out
some of the starchy taste and soften the potato for blending.
SERVES 2 TO 4
2 sweet potatoes, peeled and shredded (about 2 cups)

cup sea salt
3 carrots
2 seeded, soaked dates, drained
ΒΌ teaspoon ground cardamom
1 cup filtered water
Bragg Liquid Aminos
Place the sweet potatoes in a bowl, cover with water, add the salt, and soak for at least 2 hours. Drain. Using a homogenizing juicer, homogenize
the carrots (you should have about 1 cup). Place the sweet potato and the carrot juice in a blender and blend. Add the dates, cardamom, and water
and blend until creamy. Add the Braggs to taste and serve.
