Mixed Field Greens with Edible Flowers
Everywhere I go I find greens to eat. Wild greens grow without any cultivation or help. They have so much zest for life that they take over
people’s gardens. In the end, they just get insulted by being called weeds. I say, “Eat the weeds!” This salad is eater’s choice. Use what you like;
some greens are spicy, while others are bitter or sweet. Some edible flowers have a distinct flavor, while others are just there for color (see here).
Be creative and design a salad that suits your tastes and is made of greens found in your area. Consult the list of greens listed here for ideas.
