Creamy Herb Dressing
Avocados are the best thing to use to make a creamy dressing. It is important to choose a rich, fatty avocado, not a fruity, watery one. Sharwil
and Haas avocados are both good choices. If you don’t know the variety, it’s often a challenge to tell what it will be like inside. Since there are
more than three hundred varieties of avocado, it’s best to try every type you can find, and once you find one you like, use the same type in all of
the avocado dishes you like.
MAKES 2 CUPS
1 avocado, peeled and pitted
2 tablespoons chopped fresh flat-leaf parsley
2 tablespoons chopped fresh cilantro
2 tablespoons chopped fresh basil
Dash of Bragg Liquid Aminos
1 cup filtered water
Combine all of the ingredients in a blender and blend until smooth. The dressing can be covered and refrigerated for up to 1 day.
