Mango-Ginger Vinaigrette
This Asian-style dressing is sweet and tangy.
MAKES 2 CUPS
1 mango, peeled and seeded
3-inch piece fresh ginger, peeled and chopped
3 tablespoons apple cider vinegar
1 cup filtered water
Juice of 1 lemon
Combine all of the ingredients in a blender and blend well. The dressing can be covered and refrigerated for up to 4 days.
