Star Fruit Salsa


One winter while vacationing on Maui, I created this fabulous salsa. I had an abundance of star fruits and was going to a potluck gathering. I had


already tasted mango salsa and papaya salsa, both of which are Hawaiian specialties, so I decided to discover star fruit salsa. This sweet and


tangy salsa was a huge hit and often appeared on the menu at The Raw Experience. Serve this salsa with Flax-Dulse Chips.


SERVES 4

5 star fruits, ribs removed and diced
1 cup pitted and diced olives
1 small onion, minced and rinsed
1½-inch piece fresh ginger
2 tablespoons minced fresh cilantro
1 tablespoon apple cider vinegar
1 clove garlic, crushed
2 tablespoons Bragg Liquid Aminos
Juice of 1 lemon
Bottom half of a jalapeño chile, seeded and minced

In a large bowl, combine the star fruits, olives, and onion. Finely grate the ginger on a ginger grater or fine grater to extract its juice (you should have
about 1 tablespoon). Add the ginger juice, cilantro, vinegar, garlic, Braggs, lemon juice, and jalapeño to the star fruit mixture and mix well. Cover
and let sit in the refrigerator or at room temperature for 1 to 4 hours, until the flavors mingle. Serve with flax chips.
