Festive Seed Cheeze
This colorful version of seed cheeze played a key part in The Raw Experience’s nori rolls and earned many smiles from the residents of Maui.
MAKES 5 CUPS
¼ cup pine nuts
2 cups Basic Seed Cheeze, prepared using sunflower seeds
1 small carrot, shredded
½ yellow bell pepper, diced
1 small beet, peeled and shredded
¼ cup minced onion, rinsed
¼ cup minced fresh flat-leaf parsley leaves
¼ cup minced fresh cilantro leaves
3 tablespoons Bragg Liquid Aminos
Juice of ½ lemon
Pinch of nutritional yeast
Using a blender cup or blender, grind the pine nuts into a fine powder. In a large bowl, combine the ground pine nuts, seed cheeze, carrot, bell
pepper, beet, and onion. Add the parsley, cilantro, Braggs, lemon juice, and yeast, and mix well. Serve.
