Coconut Custard


This smooth and creamy dessert is a Hawaiian specialty. In old Hawaii, it was a custom to plant five coconut trees for each child born. This was


to provide all of the basic food, clothing, and shelter they would need. Today there is an abundance of coconuts in Hawaii, and this custard is a


true “local kine” recipe.


SERVES 2 TO 4

2 dates, seeded
½ cup filtered water
2 cups fresh, finely chopped young coconut meat
1 teaspoon pure vanilla extract

Place the dates in a small bowl, cover with the water, and soak for about 1 hour, or until soft. In a blender cup or small food processor, blend the
dates along with their soaking water, the coconut, and the vanilla into a smooth custard. Spoon into individual bowls, refrigerate until chilled, and
serve.
