Frozen Fudge
This fudge is sweet and semiaddictive. Many of my students have this recipe and make it a daily staple in their homes. This stuff tastes so good
and melts in your mouth—just be careful not to eat too much!
SERVES 6 TO 10
1 cup dates, seeded
1½ cups filtered water
1 tablespoon pure vanilla extract
1½ cups nut butter (such as almond or hazelnut)
1½ cups raw carob powder
½ cup dried shredded coconut
Place the dates in a bowl, cover with the water, and soak for about an hour, or until soft. Drain, reserving the liquid. Place the dates and vanilla in a
blender and blend until smooth, slowly adding the soaking water as needed to form a creamy consistency. Transfer the date mixture to a large bowl,
add the nut butter, and stir to combine. In a separate bowl, mix the carob and coconut. Gradually add the dry carob mixture to the wet date mixture.
Stir well. Press evenly into a 10 by 18-inch brownie pan, 1 inch thick, and freeze until firm, about 3 hours. To serve, cut into 1-inch squares.
