Veggie Kabobs
This dish has a high entertainment value. There is something to be said for fun food. These display beautifully and are almost as enjoyable to
make as they are to eat. (Pictured here.)
SERVES 4
MARINADE
2 teaspoons olive oil
¼ cup Bragg Liquid Aminos
2 cups filtered water
2 tablespoons apple cider vinegar
1 clove garlic, pressed
Juice of ½ lemon
Pinch of paprika
Pinch of chile powder
Pinch of dried cilantro
10 cherry tomatoes
1 avocado, peeled, pitted, and cubed
1 onion, cubed and separated into thin squares
10 pitted olives
1 large red bell pepper, seeded and cut into chunks
1 small pineapple, peeled, cored, and cut into chunks
To prepare the marinade, in a large bowl, combine the olive oil, Braggs, water, vinegar, garlic, lemon juice, paprika, chile powder, and cilantro. Mix
well.
To prepare the kabobs, spear the tomatoes, avocado, onion, olives, bell pepper, and pineapple onto 10-inch wooden skewers, alternating
ingredients so that the tastes and colors mix.
Place the kabobs in a shallow bowl and pour the marinade over them. Marinate the kabobs for at least 1 hour and up to 10 hours before serving.
