SUPERFOOD PARTY MIX
Roasted Curried Chickpeas and Almonds
Whether you’re hosting or looking for a guilt-free dish to bring to someone
else’s event, this little-bit-spicy, lotta-bityummy party mix is a guaranteed
hit.
120 g canned chickpeas, rinsed and drained
70 g whole unsalted dry-roasted almonds
1 teaspoon coconut oil
1½ teaspoons curry powder
½ teaspoon lime zest
Preheat the oven to 190°C. Line a baking sheet with parchment paper.
Toss all the ingredients except the lime zest in a small bowl. Arrange them
in a single layer on the baking sheet; roast until golden brown, 15 to 18
minutes (stirring halfway through). Sprinkle with the lime zest.
