Rocket-Quinoa Salad


In a serving bowl, toss together the vegetables, cheese, quinoa, and dressing.


SERVES 1


60 g baby rocket


1 celery stalk, sliced


1 medium carrot, peeled and coarsely grated


85 g chopped precooked beetroot


70 g crumbled goat cheese


90 g cooked quinoa


1 ½ tablespoons Classic Vinaigrette


(INCLUDING VINAIGRETTE) 428 CAL, 9 G FAT, 14 G PROTEIN, 40 G
CARB, 13 G SUGAR, 9 G FIBRE, 281 MG SODIUM


Spinach-Avocado Smoothie


Combine all the ingredients in a blender with 240 ml water and 4 or 5 ice cubes
and puree until smooth.

45 g spinach


150 g cucumber, peeled and seeded


15 almonds


½ avocado, pitted and peeled


120 g plain 2% Greek yoghurt
