syrup.  Every   day the sugar
concentration   is  increased
until   all the water   has been
replaced    and the fruit   is
completely  stable. The
shortest    recipe, which   I   am
giving  you here,   takes   10
days.   Whole   fruit   can take
as  long    as  4   months.
Practically any fruit   can be
candied,    but the most
