additional  35  to  40
minutes for the large
ones.   Do  not interrupt   the
baking  by  opening the
oven    door    multiple    times,
as  this    might   cause   the
puffs   to  collapse,   and if
they    collapse    they    will    not
rise    again.  Remove  from
the oven    and allow   to
cool    completely.
