2 Remove the coffee


pastry cream from the
refrigerator and transfer to
a bowl. Using a rubber
spatula, mix for 1 minute
to loosen it up. At the end
of the mixing it should be
smooth and shiny. If it still
looks lumpy, switch to a
hand whisk or handheld
electric mixer and
continue to beat until
