should be set and stiff
enough to cut cleanly.
Keep the tart refrigerated,
but take it out of the
refrigerator 1 hour before
serving so that the cream
is nice and creamy and
not too cold. Do not
decorate with the
meringues until you are
ready to serve because
they will become soggy in
the refrigerator.
