Wrap one half in plastic
and freeze for another
purpose (or make a
regular brioche following
the recipe). Roll the other
half out to a 10 × 16–inch
rectangle. It should be
about ¼ inch thick. Place
the dough in front of you
horizontally (with the long
edge closest to you) and
