The more fritters you put
into the oil at once, the
more you reduce the
temperature of the oil,
which can result in greasy
fritters. Using the spider,
flip them over right away
so that they will rise
evenly, and as they cook
gently move the fritters
around in the hot oil,
flipping them over so that
