with a rubber spatula or
wooden spoon, and then
exchange the spatula or
spoon for a whisk. Bring it
to a full boil. Once it
comes to a boil and you
see that the butter and
sugar are well
incorporated into the
milk, turn off the heat.
You don’t want to reduce
the liquid. It’s important to
have a uniform mixture at
