ascertain whether the
pâte à choux is the right
consistency. Stop the
machine, take the bowl
and beater off, and scrape
up any dough that is
sticking to the bottom.
Beat briefly to
incorporate. Pull out the
beater. If the consistency
is right, when you pull the
paddle up the dough
sticking to the paddle
