layer   in  a   composed
dessert (like   the
Chocolate   Mousse  Cake
in  a   Glass)  because you
can cut right   through it.
Another reason  why we
use almonds is  that    their
flavor  is  not domineering.
When    the nougatine
crisps  are combined    with
chocolate,  for example,
