the hot water for 1 full
minute while mixing by
hand with the KitchenAid
whisk or a hand whisk.
Remove the bowl from
the water and wipe dry.
Feel the bottom of the
bowl with your hand; it
should feel neither cold
nor hot. Return the bowl
to the mixer and resume
whipping on low speed.
