begin to heat the pan and
the sides get hot, the
sugar crystals will fall back
into the syrup and make
the entire mixture
crystallize and become
unusable. Add the corn
syrup. Examine the
saucepan closely, and if
you see sugar on the
sides, wash them down
with a clean, wet pastry
brush, using the brush to
