The flower buds of the
arbequina olive tree


grow luscious olives.
These perennial trees
are capable of long-
term carbon sequestra-
tion; the International
Olive Council says they
absorb 10 kilograms
of carbon dioxide
per liter of olive oil

produced. Spanish
growers are also plant-
ing cover crops to
help surrounding soil
capture carbon. But in
recent years, an inva-
sive bacterial disease
has taken a toll on
Mediterranean groves.
