ZESTY STEAK SALAD

1 head romaine lettuce, sliced thinly or broken into bite-sized leaves
1 small red onion, thinly sliced
2 jalapeño peppers, cut in half and seeded, then thinly sliced
¼ cup plus 1 tablespoon extra virgin olive oil
2 tablespoons Dijon mustard
1 tablespoon red wine vinegar
1 pound flank steak, skirt steak, or top round sirloin steak
salt and pepper to taste
This is a simple steak salad, but one you will love. Jalapeño pepper adds just a hint of spice, and combined with the red onion gives the salad a
zippy flavor and crunchy texture.
Combine lettuce, onion and pepper in a large bowl.
Whisk together ¼ cup olive oil, 1 tablespoon mustard and the red wine vinegar. Drizzle over lettuce, onion and pepper.
Smear 1 tablespoon of mustard and 1 tablespoon of olive oil over both sides of the steak. Salt the steak lightly and sear in a pan over very high
heat, or grill on high. It should only take a few minutes on each side. Remove from heat and slice thinly. Combine with lettuce. Add salt and pepper
to taste.
