GREEK SALAD WITH LAMB

1 pound ground lamb
½ cup finely chopped Greek herbs such as dill, mint, oregano, parsley
salt to taste
2 hearts of romaine lettuce, finely chopped
1-2 tomatoes, chopped
1 large or 2-4 small cucumbers, chopped
1 cup pitted Kalamata or other Greek olives
¼ cup lemon juice
½ cup olive oil
A traditional Greek salad includes cucumbers, peppers, olives, tomatoes and fresh herbs, but I can't think of a good reason not to add meat, too.
What better meat to add to a Greek-inspired dish than lamb? Ground lamb turns this light salad into a substantial meal.
Sauté ground lamb with herbs for 6-8 minutes, or until cooked through. Add salt to taste.
Combine meat with lettuce, tomato, cucumber and olives.
Whisk together lemon juice and olive oil. Drizzle on top of salad.
