COCONUT SOUP – Bring equal parts chicken stock and coconut milk to a boil. Add spinach and shrimp. Simmer 2-3 minutes.
TRAIL MIX – Throw together a few handfuls of nuts with ½ cup of dried cranberries or raisins, unsweetened coconut and a sprinkle of
cinnamon.
