BACON AND MUSHROOM DIP


Servings: 1 cup (macronutrient profile based on serving size of 2½ tablespoons)

6 slices of bacon

2 cups sliced cremini or button mushrooms

3 scallions

½ cup mayonnaise

juice of half a lemon, or more to taste

Time in the Kitchen: 15 minutes

This creamy dip is so good you might want to eat it with a spoon, but try dipping some chopped veggies into it instead. If you serve this dip at a
party, make sure to try some before you put it out as it's sure to disappear quickly!
Fry the bacon and sauté mushrooms in the same pan until browned. Add extra oil to sauté the mushrooms if necessary.
Blend the bacon and mushrooms in a food processor with remaining ingredients.
