TURNIP AND RUTABAGA FRIES


Time in the Kitchen: 30 minutes

Servings: 4

2 peeled rutabagas

2 peeled turnips

¼ cup olive oil

1 teaspoon dried minced garlic, or 1 tablespoon garlic, freshly minced

1 teaspoon salt

Turnips and rutabagas vary greatly in size, so you might need to buy more than two if they are small. It's better to err on the side of buying more
rather than less, as these fries will get eaten quickly! After you make the fries once, start experimenting with flavors. Adding fresh herbs or curry
powder are two ways to change things up.
Preheat oven to 450°F.
Cut turnips and rutabagas into spears about ½-inch wide and drizzle olive oil on top. Microwave for 8 minutes.
Transfer fries to a baking pan and sprinkle with garlic and salt. Bake for 15-18 minutes, stirring once or twice so they don't burn. Add more oil as
they bake if needed.
Serve immediately, as the fries tend to get soggy if they sit around too long.

Quick & Easy Tip:

Turnips and rutabagas are sometimes hard to tell apart. Typically, although not always, turnips have a purple tinge to the skin and white flesh.
