ESPRESSO RUBBED STEAK


Time in the Kitchen: 15 minutes

Servings: 2-4 (macronutrient profile based on 4 servings)

2 teaspoons ancho chili powder

2 tablespoons finely ground espresso

½ teaspoon kosher salt

¼ teaspoon ground black pepper

1 pound flank or skirt steak

This recipe is for all you coffee lovers who can't resist the aroma of espresso brewing in the morning. A rub flavored with ground espresso gives
steak a deep, rich and pleasantly bitter flavor—just like a cup o' joe. Although instant espresso will work, grinding fresh beans is preferred.
Mix together the ancho chili powder, ground espresso, salt and black pepper. Rub the mixture into the steak, covering it completely. Slice the
steak into thin strips.
Heat a little bit of oil in a pan over high heat and add the steak, searing for 4-6 minutes or until it reaches desired doneness.
