effective way to get coconut milk is to
pass hot water through grated coconut
held in muslin or cheesecloth or
squeezed in your hands; this process
will extract the oils and aromatic
compounds. Coconut milk is easily
stored and used to make a variety of
curries. It can be found in most stores. I
use light coconut milk, which has less
fat.

    Brands include Quorn, Boca, and
    Morningstar. Some are made of soy
