that beans that have been soaked
eliminate gas later. I’ve never noticed
any difference—maybe because we are
so used to eating them. (Ironically, I find
that the bloating and gas come more from
meat and dairy.) Because my life with
two little kids is so hectic, if I take the
time to soak the beans I’ll never get
around to cooking them. Soak if you feel
better doing so. If you do soak them
overnight, just pull back on the water
levels in the recipe by a cup or two and
decrease the cooking time by one or two
hours. You’ll have to play with it a bit to
get it perfect. Kidney beans are the
exception. According to some theories,
you’re better off soaking them for a few
hours, rinsing them, and then using them.
